The famous New York Strip (NYS) is the most urbane of steaks and is the first choice for many Steak Club patrons. When Delmonico's Restaurant opened in New York City in 1827, it a signature dishes cut from the short loin. The Delmonico steak. Over time it was often referred to as the New York strip. The Steak Club version of the NYS is generous and hand-trimmed for a perfect strip steak that cooks the way you like it on grill or in pan.

These boneless NY Strip steaks are carefully hand-cut so there is natural variation in size. Each NYS has the flavor and texture beef experts associate with a model New York strip steak: deeply marbled with a complexity and a sweetness that provides the finest NYS taste. This is a staple and classic at any good steakhouse. It has an excellent amount of marbling, is tender and full-flavored. Many people prefer this cut cooked rare, or blue, showcasing the delicate flavor and naturally tender texture. Internationally it is called a "club" steak.

New York Strip, though not as tender as the nearby rib eye or tenderloin, is still very tender nonetheless. The fat content of strip steak is somewhere between the two cuts. As the shortloin is a sizeable muscle, it can be cut into much larger portions.
