When you hear or see the words rack of beef ribs, you can be forgiven for thinking automatically of a roaring grill somewhere in the Deep South set amid bending Magnolias in some kind of barbecue Arcadia. Southern barbecue is the closest thing they have in the U.S. to Europe's wines or cheeses. Each state is different and if you drive a hundred miles, the barbecue will change. Count on it. It is a consummation devoutly to be wished for.

And more seriously, I have to say the cuts are excellent. The beef isn't too lean, which lets it cook perfectly on the grill. I didn't use a drop of batter, just some pepper and minimum salt. Served it with crunchy bread and salad. Amazing!
