Grandma and grandpa are coming. Aunts, Uncles and cousins on the way. Or maybe you’re having over close friends or an important colleague. Is there anything better than a fine Sunday Roast? Standing rib roast, also known as prime rib, is one of the nine basic cuts of beef consisting of anywhere from two to seven ribs. Prime, even the name suggests excellence, the top, the best, the finest cut of beef. The deep brown crust crackling with salt and fat, slices open to reveal a juicy pink center that extends from edge to edge. The faint but distinct aroma of dry-age beef permeates the room as you slice it. When you see such our roast lying ready to slice in front of you, everything else—the hubbub of the working week, the traffic jams, the disappointing weekday lunches—vanishes as your senses take over. Sunday lunch. Nothing like it.
